Creamy Mushroom Pasta (No butter or Cream)

Pasta is my go to comfort food when I don’t want to cook anything fancy. This pasta is easy to make and requires very few ingredients. My version is without any butter or cream but still has the silky texture which can be achieved with some parmesan cheese, milk and the lovely juices coming out from your mushrooms. Hope you like it!

Ingredients

  1. Pasta - Fettuccini (or any pasta of your choice)

  2. Any Mushroom - (One handful)

  3. Garlic (3 cloves)

  4. Milk (1/4th cup or enough to have a thin layer in the pan)

  5. Parmesan Cheese

  6. Olive Oil

  7. Handful of parsley (for garnish)

Preparation:

  • Olive Oil: Heat some olive in in a pan

  • Garlic: Drop in your chopped garlic and onions, cook them until they are slightly cooked (don’t wait for them to turn brown)

  • Mushrooms: Fine chop mushrooms and sauté them with the Garlic

  • Pasta: Cook the pasta (as per the packet ingredients) with some olive oil and salt

  • Mix the pasta with the Garlic and Mushrooms, sauté for 3mins.

  • Pour some milk water (about 1 cup) + Grated Parmesan

  • Serve hot, garnish with chopped parsley and more Grated Parmesan (add some black pepper to taste)
