Healthy Frittata for breakfast (only 4 ingredients)

Frittata is an Italian egg-based dish, think of it as a thick omelette with veggies or meat mixed inside. The Spanish might do it differently by addIng some potatoes to call it the Spanish omelette. My version is inspired by the Italians, what’s available in my refrigerator and is super quick to make. The stars of this dish are garlic and goat cheese (or ricotta). Hope you like it

Frittata

Ingredients

  1. Eggs (4 pcs)

  2. Spinach (one hand full)

  3. Garlic (2-3 cloves)

  4. Ricotta or Goat Cheese (per your taste)

  5. Olive Oil for sauté

Preparation

  1. Heat a small pan (please make sure to use a small pan for 4 eggs, if its a large pan double the number of eggs. This is important to achieve the deep dish feel of the frittata)

  2. Drop in your garlic, sauté for 1 min (dont let them get dark)

  3. Drop in your spinach, sauté until they loose volume (you can also add cherry tomatoes if you have)

  4. Time for the eggs, whip the 4 eggs in a bowl + and add some salt/seasonings.

  5. Drop the mix in the pan, stir it for sometime (like your are making an omelette, not a required step but good if you want to make it fluffy)

  6. Take chunks of ricotta/goat cheese and start placing them on the pan full of the egg mix

  7. Cover it with a lid for 30seconds or until the egg surface looked a little cooked

  8. [Optional step] Put the pan in an oven for 15seconds to broil 450F (to get a charred texture)

  9. Flip it on a plate and flip it back on a second plate (so the top becomes the top again)

  10. Cut it into pie shaped nice frittata and serve hot 🔥
